Our coffee roaster is a Probat UG15, imported from Europe and refurbished in the United States.  It is a small batch roaster with a fifteen kilogram capacity.

The primary factors that make it such an effective roaster are cast iron construction, which uniformly conducts heat and provides increased consistency. Its convection air flow design, which efficiently moves air through the machine to give our roasts a cleaner taste, and  large cooling tray, prevent carry over cooking and help maintain accurate roasting.

We carefully select our green beans after sample roasting to assess their quality.  We do not pre blend varietals before roasting to ensure every different bean attains its optimum flavor.  After roasting we taste each roast separately to evaluate quality and flavor before blending.

We roast multiple times a week so as to serve the freshest coffee to our patrons everywhere.
